When you tell the forum to insert your signature, it's actually finishing the HTML for you, it's not doing something like putting in a SSI call (like a news script). That's why there's no signature option in the edit post page, because your sig is already written there. The name changes because it's really just a link to your ID# (mine happens to be 6), and is using an SSI call or the equivelant to show the name. I think it would take some major rehauling to make signature's change in old posts.
